Kickstart Your Health Class Series

This class series is based on the Physicians Committee for Responsible Medicine’s successful 21-day Vegan Kickstart program. Much of the basis of the Kickstart is about making a qualitative shift in the way we eat as opposed to a quantitative shift.


A vegan diet of whole grains, beans, vegetables, and fruits can help prevent diabetes, cardiovascular disease, cancer, and other chronic diseases. According to the Academy of Nutrition and Dietetics, “Appropriately planned vegetarian diets, including total vegetarian or vegan diets, are healthful, nutritionally adequate, and may provide health benefits, in the prevention and treatment of certain diseases.” This 6-week class series will include educational information from the Physicians Committee for Responsible Medicine, a plant-based cooking demo and sampling each week. Recipes and resources will be distributed to participants each week.


Kickstart Your Health 6-week series starts on Thursday, January 9th and runs for 6 consecutive weeks. This class will meet each week from 6-8PM at Johnston Chapel, Halls Ridge Road, Princeton, WV (Mercer Christian Academy Entrance), Room 140.
